   Ask to see a barrel aging Vin Jaune - look for the 'voile' (veil), a thin film of yeast on the surface. It works like the flor in Fino Sherry, protecting the wine from harsh oxidation while allowing slow oxygen contact. Puffeney's wines aged 8.5 years on average, not just the 6 year 3 month minimum.    Jacques Puffeney made his last vintage in 2014.

   Ask for Jacques Puffeney Vin Jaune - he was called 'The Pope of Arbois' and made wine for 52 vintages before retiring in 2014. He sold his vineyards to Domaine du Pélican but kept his wine stock. Older vintages are rare and expensive (€50-100+). Taste for: nutty almond, honey, dried citrus, curry spice, and saline acidity. The finish lasts minutes, not seconds. If Puffeney bottles are gone, ask for Domaine du Pélican - they now farm his old vines.

   Request Comté aged at least 24 months with your Vin Jaune. This is the pairing every Jura winemaker will insist on - the nutty, crystalline cheese echoes the wine's oxidative complexity. Also ask for morels if available - Vin Jaune with morel cream sauce is the region's special occasion dish. The Trousseau and Poulsard reds here are underpriced and extraordinary - taste them too before focusing on Vin Jaune.
