At your table in After Seven, order the 5-course menu (CHF 195) with Valais Wine Pairing (+CHF 95 = CHF 290 total). Ask the sommelier to include Heida from Visperterminen and Cornalin from Sierre, then let them explain each pairing - why this wine with this dish, what the altitude does to the grapes, which producer made it.

   After Seven bakes bread at your table - a theatrical touch that captures their philosophy of fine dining that doesn't take itself too seriously. During the meal, watch the bread come out of a mini oven, smell it, break it while still warm. Don't rush this moment - the bread service is designed as a pause between courses. Ask the server about the flour (often local Swiss grains) and pair the warm bread with butter and your current wine pour.
