Chian soutzoukakia (spicy meatballs infused with mastiha resin), masourakia (phyllo pastry with mastic-flavored almond filling), or mastiha liqueur with sweet mastiha preserve cannot be made with authentic flavor anywhere else in the world - the PDO is geographic. Order soutzoukakia as starter and masourakia as dessert at any taverna in Mesta, Pyrgi, Olympi, Vessa, or coastal tavernas near Emporios. Between courses, ask your server: 'Is the mastiha here from the village cooperative or commercial?' Traditional village production uses teardrops harvested directly beneath trees; industrial processing tastes different. The handpicked cooperative mastiha has cleaner, sharper aromatics.
🔄 BACKUP: Ask for 'mastiha ouzo' or 'mastiha liqueur' as aperitif. Chios's Skinos mastiha spirit is internationally available, but at source the unaged fresh mastiha liqueur is something else entirely.
