   Touch the Only Walls in Greece Built to Confuse Invaders

   Mesta was built as a PENTAGON during the Byzantine period and expanded under Genoese rule in the 14th century. The stone houses are built so close their walls form a continuous defensive perimeter - the town itself IS the fortress. The narrow, winding alleys were 'intended to confuse invaders' who found a labyrinth they couldn't navigate when Ottoman pirates entered. Enter Mesta (35km from Chios town) through the single gateway and immediately try to navigate without a map to the central square. Get genuinely lost - the alley system was designed so even with a guide, first-time visitors lose direction. When you find the central square, you'll understand: a single defensible interior space with all alleys converging, invisible from exterior walls. The mastic resin trade funded this level of paranoid architecture.

   🔄 BACKUP: Pyrgi village (15km northeast) shows different medieval defense: the 'xysta' geometric black-and-white patterns on house facades served as collective visual identity, confusing which was home versus defensive structure from outside.

   Smell Mastic Resin Directly From a Mastichochoria Tree

   The mastic trees (Pistacia lentiscus var. chia) grow ONLY in southern Chios - nowhere else on Earth produces this crystalline resin. Scientists cannot fully explain why the same species across the Mediterranean only produces mastiha on this specific microclimate. Walk any path between the 24 mastichochoria (Pyrgi to Mesta) and find the small evergreen trees with reddish bark. Look for white crystalline 'tears' dried on trunks and ground below - these are the mastiha. The smell when fresh is extraordinary: piney, resinous, slightly sweet, almost medicinal. Touch a resin tear on bark (don't take it - harvest belongs to village cooperative). This is the same substance that flavored bread, medicines, and wine across the Byzantine empire for 1,500 years.

   🔄 BACKUP: Any mastiha shop in Chios town sells raw mastiha crystals. Buy a small bag and chew a few - mastiha is the world's oldest natural chewing gum, used since antiquity for exactly this purpose.

   Taste a Mastic-Infused Dish That Exists Nowhere Else on Earth

   Chian soutzoukakia (spicy meatballs infused with mastiha resin), masourakia (phyllo pastry with mastic-flavored almond filling), or mastiha liqueur with sweet mastiha preserve cannot be made with authentic flavor anywhere else in the world - the PDO is geographic. Order soutzoukakia as starter and masourakia as dessert at any taverna in Mesta, Pyrgi, Olympi, Vessa, or coastal tavernas near Emporios. Between courses, ask your server: 'Is the mastiha here from the village cooperative or commercial?' Traditional village production uses teardrops harvested directly beneath trees; industrial processing tastes different. The handpicked cooperative mastiha has cleaner, sharper aromatics.

   🔄 BACKUP: Ask for 'mastiha ouzo' or 'mastiha liqueur' as aperitif. Chios's Skinos mastiha spirit is internationally available, but at source the unaged fresh mastiha liqueur is something else entirely.
