   💡 WHAT: Klaava takes NO reservations. Ever. That's not an oversight — it's a manifesto. Laura Styyra and Tom Hansen deliberately built a wine bar that belongs to whoever shows up. It opened on Midsummer 2025, exactly 20 years after Kuurna opened next door in 2005 and sparked Helsinki's entire bistro boom. This bar is the graduation ceremony.

   🎯 HOW: Just arrive. No booking, no planning. Walk the cobblestone streets of Kruununhaka — this neighbourhood has been here since 1640, the oldest stone building dates to 1757, Helsinki Cathedral is 400 metres away. The city was already old when this street was laid. Find the door. Go in. The fact that you couldn't book means you're already doing it right.

   Ask for a Glass That Rewards Curiosity Without Demanding It

   💡 WHAT: The wine list moves between classic European small growers and low-intervention, organic choices — but it never performs. Kuurna has been sourcing from ecologically and socially sustainable producers since 2005. Klaava inherits that exact DNA. These aren't natural wines chosen for shock value or label cool — they're chosen because they work with the food that's coming from the same small-producer supply chain.

   🎯 HOW: Tell whoever's pouring: 'Something you'd drink yourself tonight.' That unlocks the real list. Wines by the glass in Helsinki's serious wine bars typically run €11–€16. Whatever lands in front of you, ask one question: where are the grapes from? That question opens a conversation that usually runs longer than your first glass. Expect producers from lesser-known European appellations alongside classic Burgundy or Loire.

   Order the Welsh Rarebit and Trace It Back to Hakaniemi

   💡 WHAT: Here's the thing nobody tells you: the vegetables and produce on this bar table come from Kuurna's own organic and biodynamic shop at Hakaniemi Market Hall, two kilometres north of here — the same Kasvispuoti that Styyra and Hansen opened in 2023. The kitchen-to-bar supply chain is one continuous philosophy. When you eat the smoked cod liver or herring toast or the pâté en croûte, you're eating the same ingredient obsession that made Kuurna famous in 2005. World of Mouth reviewers called it: 'everything simple, delicious, and clearly made with love.'

   🎯 HOW: Order the Welsh rarebit — it's the anchor. Then add whatever is seasonal that night. The small plates are built to share and to pair. Snacks run budget cost — this is deliberately accessible, the deliberate opposite of a tasting menu. Pair with whatever's in your glass. The wine and the snacks are chosen as a system.

   📍 WHERE: Step out onto Meritullinkatu after your first glass. Walk half a block in either direction.

   💡 WHAT: Kruununhaka — meaning 'Crown's Paddock' — has been Helsinki's oldest and most distinguished neighbourhood since the city was moved here in 1640. The cobblestones under your feet have been here since before the United States existed. Helsinki Cathedral is 400 metres south. The oldest stone building in all of Helsinki (1757) is in this district. The House of Estates, the Bank of Finland, the National Archives — all within walking distance. Klaava didn't just open in a wine bar location. It opened in the neighbourhood where Helsinki decided what kind of city it wanted to be.

   🎯 HOW: Stand outside on Meritullinkatu. Look at the 19th century neoclassical facades around you. Then look back at the door you just walked out of. In 2025, the same year Kuurna turned 20, the Michelin guide named this street as part of Helsinki's bubbling casual dining revolution — without giving it a star. That's almost more meaningful. The scene is ahead of the guide.
