   "Come quickly, I am drinking the stars!" - THE QUOTE IS FAKE - it first turns up in a champagne advertisement late in the 19th century, more than 150 years after he died (Hautvillers Abbey, 28km from Reims). The invention story is no older: a fellow monk, Dom Jean-Baptiste Grossard, wrote it down more than a century after his death, and no document backs it. The REAL story is better: he made still wine, and built his name on blending and gentler pressing. Drive to Hautvillers and find his simple black tomb slab in the free abbey church.

Book the limited and expensive tours (€50-150+) at domperignon.com, which include tastings of current and possibly library vintages. Ask: "What makes a year worthy of Dom Pérignon?" - not every year qualifies for this prestige cuvée.
