   Buy a bottle of champagne to bring to the dock — this is what locals do. La Cave de Cancale (26 Quai Thomas) sits a 5-minute walk uphill from the market, and the owner knows the perfect pairing. Ask "Un champagne pour les huîtres?" They'll recommend a Blanc de Blancs or brut nature (€25-50) and provide a corkscrew.

   The Concrete Steps Ritual

   Locals sit on the concrete steps directly in front of the oyster market, balance their oysters on the stone, and watch Mont Saint-Michel while eating. This is the ritual: throw shells toward the beach (gulls clean up), no plates, no forks. Buy a dozen minimum, grab napkins, find your spot on the seawall facing the bay. Time it for low tide when the oyster beds are visible.
