1. 1 Hunt the Wine Medieval Nuns Invented by Accident Wine · Price: moderate

   Vin Jaune exists because medieval Benedictine nuns FORGOT to top up their barrels. At Château-Chalon's abbey, nuns planted Savagnin vines on impossibly steep slopes (up to 45% gradient) and aged wine in barrels without refilling the evaporating wine. A veil of yeast formed on the surface. Six years later: liquid gold. Visit the Maison de la Haute Seille's vaulted cellar (26 rue de l'Église, open daily except Wednesday April-October). Taste Vin Jaune with Comté cheese (€5-10)—when you taste it, you're drinking what those medieval nuns created 800 years ago, unchanged.

2. 2 Decode the 62cl Bottle That Tells a Story History · Price: high

   Every Vin Jaune comes in the clavelin—a squat, 62cl bottle commissioned by the Abbot of Clavelin in 1914. Why 62cl instead of 75cl? It's the 'angels' share' made tangible: start with 1 liter of wine, age it 6 years and 3 months in a barrel that's NEVER topped up, and 62cl remains. The missing 38cl evaporated. At any of the 8 independent winemakers in Château-Chalon, hold a clavelin and feel the thick glass designed to distinguish Vin Jaune instantly. Budget €60-160 per bottle.

   Backup: If no wineries are accessible, the Maison de la Haute Seille sells bottles and can explain the clavelin's history.

3. 3 Walk the Slopes That Killed Phylloxera's Cousins Adventure · Free

   Walk the Belvédère trail from Parking de la Tour: Sainte-Anne → Ménétru → Saint-Jean viewpoints (1.5km loop, 30-45 minutes). These vineyards grow on 45-degree slopes so harsh that when phylloxera ravaged France, related pests couldn't survive here long enough to destroy the vines. At the Saint-Jean viewpoint, look DOWN at vineyards cascading below the village fortress—each row is a battle against gravity. The south-southwest exposure + limestone cliff protection creates a microclimate 2-3°C warmer than surrounding valleys.

   Backup: If weather is bad, the Maison de la Haute Seille has a panoramic terrace with the same view and interpretive panels explaining the terroir.

4. 4 Taste What Jean Macle Calls 'Liquid Time' Wine · Price: very high · Optional

   Jean Macle is called 'the father of Vin Jaune'—his family domaine produces Château-Chalon from 4 hectares on these slopes. If visiting January 30-February 1, 2026, seek out Domaine Jean Macle's stand at the Percée du Vin Jaune festival in Lons-le-Saunier (tickets €22-40). Otherwise, contact Domaine Berthet-Bondet for Jean Macle availability. A 2015 Jean Macle Château-Chalon retails around €80-100 per clavelin. Taste with 24-month aged Comté—locals say 'Vin Jaune and Comté—married in the terroir.'
