Alléno's true passion is sauces, "the fruit of a long-term labour of love revolving around extraction and fermentation." Watch for the sauce work.    Before this resort existed, architect Laurent Chappis was a POW sketching a ski resort on scraps of paper in an Austrian stalag—the world's first purpose-built one. Nicknamed "the Anarchitecte," he invented ski-in/ski-out and surveyed the Trois Vallées alone on skis in 1946. You're dining in the most expensive restaurant of the dream he drew in prison. He died in 2013. Silently acknowledge this history beneath your feet.
