   Walk to 3 Rue de la Tour. Look for the small sign - easy to miss. Inside, a tiny bar with serious local wines. Ask for "quelque chose de local" (something local). They'll pour Bellet or a small Provence producer. €5-8/glass.

   Where Nice sommeliers drink after their shifts.

   La Part des Anges, 17 Rue Gubernatis. Go after 19:00. Tell the owner you're doing the Riviera rosé route and want to understand "vin nature vs. Provence commercial rosé." He'll pour something that changes your understanding. Trust his choices. €8-15/glass.

   Walk through Cours Saleya after 21:00. The market stalls are gone. The restaurants' tables spill onto the square. Find the bar with the most locals (least English menus) and order a pastis or local wine. This is Nice after the tourists leave.
