Go 1 hour before sunset—you'll see the light change. The narrow staircase gets crowded; weekday mornings are quietest.

   The Museo della Tortura (Via San Giovanni, 125) has 100+ medieval torture devices—€10 entry. Look for the 'Pear of Anguish' and the Iron Maiden replica. The explanations are darkly fascinating. Ask the attendant which device was used most often in San Gimignano—the answer is unexpected. Not for kids or the squeamish.

   Vernaccia di San Gimignano became Italy's first DOC in 1966.

   Skip the tourist bars on Piazza della Cisterna. Walk to Enoteca Gustavo (Via San Matteo, 29) for local prices. Order the Vernaccia Riserva (€4-6/glass)—it's aged, more complex than the basic. Ask for a Vernaccia from Panizzi or Cesani—the best producers. Michelangelo described this wine as 'kisses, licks, bites, thrusts, and stings.' See if you agree.

   The best viewpoint is from Rocca di Montestaffoli (the fortress ruins)—free entry, 5 min walk uphill from Piazza del Duomo. Arrive 30 min before sunset. Face east toward the towers. As the sun drops behind you, the towers turn gold, then silhouette black against the orange sky. This is the shot. Bring wine from the enoteca.

   From Rocca di Montestaffoli viewpoint, try to count all 14 surviving towers. The famous ones: Torre Grossa (tallest, 54m), Torri dei Salvucci (the twin towers), Torre Rognosa (second tallest), Torre del Diavolo (Devil's Tower). Ask a local which tower belonged to which family—the rivalry stories are wild. Bonus: find the one tower that's actually a chimney disguised as a tower.
