   Find a bottle of Blanc de Morgex et de La Salle - made from Prié Blanc grapes that have NEVER been grafted. Why? Phylloxera bugs can't survive above 900m. These vines are genetically identical to what Romans drank.

   Ask for 'Blanc de Morgex et de La Salle' at any enoteca on Via Carrel — the only wine in Europe made from ungrafted pre-phylloxera vines. When the vine plague killed 90% of European vineyards in the 1860s, these survivors at 900-1,200m altitude saved European wine genetics by accident of geography. The bug simply can't live that high. Tell the shopkeeper you're hiking to Lago Blu and they'll recommend a chilled bottle (€15-25), plus local Fontina DOP and Valle d'Aosta salami for the perfect altitude picnic.

   BACKUP: If Blanc de Morgex is out, any Valle d'Aosta white works - just ask for 'un bianco locale da picnic.'

   Arrive at Lago Blu's north shore before 10:00 when the glacial lake is glass-still and the Matterhorn's 4,478m south face reflects perfectly. After 11:00, thermal winds destroy the mirror.

   The 2-minute walk from the small parking area (5 minutes downhill from Cervinia toward Valtournenche) reveals a natural mirror — the Matterhorn's Italian face reflecting in glacial water that's blue-green from alpine algae. This is THE postcard shot, but only in calm conditions between 8:00-10:00am. The pushchair-accessible paved path means you can roll your cooler to the perfect flat rocks on the north shore, away from road noise.

   BACKUP: If clouds obscure the peak, the lake itself is still stunning. The blue-green color (from cyanobacteria) photographs beautifully even without the reflection.

   Open your Prié Blanc at the lake and experience the altitude effect: alcohol hits 30% harder at 2,000m due to lower oxygen. Romans knew this - the Via delle Gallie passed through this valley and legionnaires rationed wine carefully.

   Pour the Blanc de Morgex et de La Salle on Lago Blu's north shore and taste the minerality — limestone and schist from vines growing at 900-1,200m altitude. The wine's high acidity (from 40°F day/night temperature swings) cuts through fatty Fontina perfectly. Observe how it affects you faster than at sea level — this is why Valle d'Aosta wines are traditionally lower alcohol (11-12%). Locals adapted over centuries, knowing the Roman Via delle Gallie passed 5km from here, where wine was a daily ration but carefully measured at altitude.

   BACKUP: If you forget the wine, the alimentari in the parking area sometimes has bottles. Or just enjoy the Fontina - it's made from milk of cows grazing at 2,500m and tastes like the mountain itself.
