   Descend into the Caves a Fox Discovered

   In 1898, a Jesuit monk tried to smoke a fox out of a hole in the ground — the fox had been raiding the monastery's chickens. A boy orphan named Jean Gharios fell through the smoke hole into a network of 2,000-year-old Roman caves that nobody knew existed at Château Ksara (33.835, 35.889). Join the free guided tour (starts with a documentary film, then into the caves). Bring a light layer — it's 11–13°C down there regardless of whether it's 35°C outside. Ask your guide about Jean Gharios and the fox — the best guides know every inch of this story.

   Taste the Wine the Monks Kept for Themselves

   The Réserve du Couvent is named for the Jesuits' private wine reserve — the bottles they didn't sell. The five-wine tasting is included FREE in the standard tour at the Château Ksara tasting room (same compound). Pay attention when the guide pours the Réserve du Couvent and ask: 'What did the Jesuits drink themselves?' It unlocks the whole story. These grapes grow at 1,000 meters above sea level — higher than almost any vineyard in Europe.

   Locate the Observatory That Named a Wine

   In 1902, the Jesuit Fathers built the first meteorological observatory in the Middle East — right here at Ksara. After the cave tour, walk the estate grounds (33.835, 35.889) and find the observatory building. It's not always accessible inside, but the exterior and courtyard are part of the estate visit. Ksara named one of its finest white wines after it — Blanc de l'Observatoire, and the label reproduces the original building.

   Toast 7,000 Years on the Promenade in Zahle

   Zahle is the 'City of Wine and Poetry' — UNESCO made it a Creative City of Gastronomy in 2013. Head to Al Wadi — the 300-metre riverside promenade (33.8476, 35.9024), 8km from Château Ksara, lined entirely with outdoor restaurants serving traditional Lebanese mezze and arak. Lebanon has been making wine for 7,000 years, and a glass of Ksara Réserve du Couvent with Lebanese mezze in the gorge at Zahle is where that entire thread becomes real. Casino Arabi is the most popular mezze destination on the promenade.
