   Cross the Sado — The Same Route Roman Ships Used

   Board the Atlantic Ferries catamaran from Setúbal. You are crossing the same estuary mouth that Roman supply ships used for 500 years.

   You are about to cross the Sado River estuary on the same water route that Roman cargo ships used continuously from the 1st through 6th centuries CE. Buy your foot passenger ticket (~€6–7 one way) at the Atlantic Ferries terminal (Avenida Jaime Rebelo, Doca do Comércio, Setúbal) — it's a 10-minute walk from the train station. During the 15-minute crossing, stand on the river side and watch for bottlenose dolphins: this estuary hosts one of only 3 resident colonies in all of Europe, with a 95% spot rate. The peninsula you're approaching was probably an island in Roman times, reached entirely by boat.

   🔄 BACKUP: If dolphins don't appear on the crossing, licensed dolphin-watching tours depart from the Fontainhas Dock next to the ferry pier in Setúbal (2.5–3 hours, ~€25–40). Atlantic Ferries runs hourly 7:30am–23:10, 365 days/year.

   Count the Tanks — 182 Stone Vats, 1.4 Million Litres

   Stand inside the largest fish-processing complex the Roman Empire ever built. Run your hand along a cetaria wall that has not moved since the 3rd century.

   What you are standing in is the LARGEST fish-salting complex ever found in the Roman Empire — surpassing every site in the Mediterranean, Black Sea, and North Africa. The numbers at Ruínas Romanas de Tróia: 182 square stone cetariae (fermentation tanks), total production capacity of 1.4 MILLION LITRES per batch. Walk to the largest workshop with 19 tanks and touch the stone lip of a cetaria — sardines and salt were layered in these exact stones for months of fermentation. Entry ~€6, guided tours Wed/Fri 10:30am in summer (email arqueologia@troiaresort.pt). Ask your guide about the 1,500-year gap before these tanks were used again.

   🔄 BACKUP: If the ruins are closed, the site is still visible from the outside path. The scale is apparent even from the perimeter — count the tank clusters visible from the fence.

   Discover the Tank That Started Fermenting Again in 2020

   For the first time in over 1,500 years, garum was produced inside an actual Roman tank at Tróia. The same sardines. The same Sado salt. A 5-month wait.

   In 2020, a Portuguese company called Selo de Mar did something nobody had done since the collapse of the Western Roman Empire: they fermented garum INSIDE one of the actual Tróia cetariae tanks. Same sardines from Sado Bay waters (90% of the original Roman input), same salt from the estuary salt pans, 5+ months fermentation time. The resulting "Garum sardinha Tróia 2020" is vintage-dated like wine. Find the interpretive panel about this revival project (included in your €6 entry) and read where amphora stamps from these tanks were discovered: Hadrian's Wall, the Danube frontier, Morocco — Roman soldiers eating Portuguese sardine sauce on three continents.

   🔄 BACKUP: Selo de Mar sells their garum online at selodemar.com and at Can the Can restaurant in Lisbon's Mercado da Ribeira. Order a bottle before you visit so it arrives while the experience is fresh.

   Eat What the Fishermen Couldn't Sell

   Choco frito — fried cuttlefish — was invented by Setúbal fishermen who couldn't sell the small or half-eaten catch. They fried it at the tavern instead. This is that dish.

   Setúbal's cuttlefish (choco) were always plentiful in Sado Bay, but the small or half-eaten ones had no commercial market. Fishermen brought them to waterfront taverns at day's end, fried them in oil, and ate them with wine while settling accounts — now Setúbal's most famous dish. Order "choco frito" with "um copo de vinho da casa" (Palmela DOC from the hills visible from your table) at Rei do Choco Frito (Avenida Luísa Todi 92, open since 1974). Arrive before 7pm or expect a queue. Around €15/person including wine — the same ritual Roman workers performed 500 meters across the water, with garum as their condiment.

   🔄 BACKUP: If Rei do Choco Frito has a long wait, the waterfront along Avenida Luísa Todi has multiple cervejarias serving choco frito — it is on every local menu in Setúbal. The Mercado do Livramento (fish market, all week except Mondays) shows you the catch before it reaches any kitchen.
