   Bouzy is 87% Pinot Noir — the highest concentration in all of Champagne, a decision made when phylloxera ravaged France in the 1870s and growers replanted almost exclusively Pinot Noir. Starting from the village center (49.0669°N, 4.0647°E), follow the red-marked trail signs (GR221 passes through) to walk the southeast slopes where historic parcels face the morning sun. The chalk slopes hold heat like a natural amphitheater, and you'll see stone-built terraces and old iron markers indicating parcel boundaries from the 1890s.

   Here's what nobody tells you about Champagne: Bouzy Rouge predates the region's famous sparkling wine by centuries — monks began fermenting Pinot Noir into still red wine here in the 1200s, three centuries before Dom Pérignon was "inventing" sparkling Champagne. Visit Maison Alain Vesselle (13 Rue Jeanson, 51160 Bouzy, open Mon-Sat) and request specifically their Bouzy Rouge Coteaux Champenois. Ask about the age of the vines — some parcels are 45+ years, planted on pre-phylloxera rootstocks — and taste for morello cherry, blackcurrant skin, and white pepper flavors impossible in cooler Burgundy.

At your table after tasting Bouzy Rouge, request a village-level Burgundy Pinot Noir (Gevrey-Chambertin or Morey-Saint-Denis) for side-by-side comparison. Hold both wines to the light — notice Bouzy Rouge's lighter, more crimson tone — then smell them blind and guess which is Burgundy. Most people guess wrong because Bouzy's chalk reflects morning light back onto grapes, creating aromatic intensity without the earth.
