   Book the "Roederer Experience" (from €75) at louis-roederer.com. The chalk cellars hold 2.5 million bottles aging in crayères carved in Roman times. Roederer owns 240 hectares of vineyards - more than any other major house - giving them control over 70% of their grape supply. Ask about the Russian connection; by 1873, roughly a third of Roederer's production went to the Russian Imperial Court.

   When the Russian Revolution hit in 1917, Roederer lost their biggest customer overnight. The Tsar's debt was never paid. Ask guides how the house diversified - they bought estates in Bordeaux (Château Pichon-Longueville) and California (Roederer Estate). Today Cristal is still the prestige cuvée, but it's drunk by rappers, not Tsars (Jay-Z famously switched to Armand de Brignac in 2006).
