Book at jumboseafood.com.sg 3-7 days ahead and request window seating for bay views — this is where champagne pairing expertise meets Singapore's most famous dish.
Backup: Original JUMBO at East Coast Seafood Centre is more authentic (but no champagne pairing expertise).

Chili crab uses Sri Lankan mud crabs — the meatiest, sweetest variety — and JUMBO pioneered this dish in the 1950s. Ask your server: "What size Sri Lankan crab do you recommend for two?" and they'll guide you (typically 600g-1kg per person). Order both chili crab AND black pepper crab to compare the flavor profiles that interact differently with sparkling wine.
