   A 4x4 carries you into a UNESCO World Heritage Site. Then you fly. 11 ziplines through indigenous forest canopy. Some stretch over 300 metres. You'll cross a suspension bridge suspended high above a spectacular double waterfall in a narrow sandstone ravine. The forest you're flying through - yellowwood, stinkwood, hard pear - has been here longer than the wine industry. Two trained guides accompany each group. Minimum age: 5 years. Duration: 4-5 hours total. Then you descend into Elgin, South Africa's COOLEST wine region by harvest date. Where apples meet Sauvignon Blanc. During summer (Nov-Feb), the amphitheatre hosts live concerts under the stars. South African artists performing in a natural cathedral. Even when there's no concert, walking through the space with sunlight filtering through the canopy is otherworldly. After your tasting at Paul Clüver, ask staff for directions to the amphitheatre.    Elgin is a bowl surrounded by the Hottentots Holland, Kogelberg, and Groenland mountains. Elevation ranges 300-900m. Traditional apple and pear orchards still dominate. Wine is the newcomer here. The mountains trap cool air. The proximity to the ocean (20km to False Bay) brings maritime influence without the harsh wind of Cape Point. The result: Elgin has the LATEST harvest dates in South Africa - sometimes 3-4 weeks after Stellenbosch.
