KWV Cathedral Cellar & House of Fire

Founded in 1918, KWV regulated the whole South African wine industry from the 1920s to the early 1990s. The Cathedral Cellar holds enormous carved vats. The House of Fire is the building where KWV distilled its first brandy, in 1926. KWV says its 20 Year Old pot-still brandy won the Best Brandy in the World Trophy at the 2015 International Spirits Challenge. South African brandy regulations are stricter than Cognac: 3-year minimum ageing (vs 2 for Cognac) in 340-litre barrels. The first Cape brandy was distilled by an unnamed cook on the ship De Pijl in Table Bay, 1672.

   The Cathedral Cellar where the KWV monopoly concentrated its power

   From the 1920s to the early 1990s, KWV regulated the whole South African wine industry. Planting rights. Varieties. Yields. Prices. This was not a winery. It was the law. The Cathedral Cellar is where that power lived. Thirty-two large vats line the walls like guardians; a father and son carved twelve of them in 1968 and 1970. The dome ceiling. The stained-glass windows. When Dutch poet Antonie Donkersloot entered in 1930, he called it "a true cathedral of wine."    Free look at South Africa's Wine of Origin seal

   Pick up any KWV bottle at the retail area. Find the small seal on the neck - winemakers call it the "bus ticket." It is South Africa's Wine of Origin seal, found on bottles across the whole industry, not only KWV's. Ask staff to show you how it works. General entry area of KWV Emporium, no booking needed. If retail's busy, ask at reception about the seal.

   Premium brandy blending experience with personalized label

   Work with KWV's Brandy Expert to blend your own pot-still brandy from different aged components. You taste. You blend. You bottle with a personalized label. You take it home. Book at least two weeks ahead at House of Fire, KWV complex. R1,650/person, Saturdays available on request. Includes canapés and a deep dive into brandy-making. The expert guides you through age profiles, barrel char levels, and flavor balancing. Your final bottle is sealed, labeled, ready to go. If brandy blending's sold out, ask about private Cathedral Cellar tours (minimum R600+ per person). More intimate than public tours, with access to restricted cellar areas.
