The Story
In the 1990s, Bobal was Spain's dirtiest secret—the country's second-most planted red grape, yet 90% went to bulk wine or distillation. Then Toni Sarrión of Mustiguillo did something crazy: he treated Bobal like Burgundy. Single vineyards. Old vines. Minimal intervention.
