The Story
Garganega is Soave's grape. For decades, Soave was Italy's cheap white—over-cropped, bland, sold in 1.5L bottles. Then, producers like Pieropan and Anselmi made serious Soave. The grape's potential was revealed.
Insider Story
1970s-80s Soave was a disaster. Yields hit 150+ hL/ha. The wine was watery and characterless. Soave became synonymous with 'cheap Italian white.'
But a few producers refused to play along. Pieropan and Anselmi slashed yields, used single vineyards, and aged in oak. The result was rich, complex, age-worthy Soave. Critics noticed.
Soave Classico (hillside vineyards) is the quality zone. Soave DOC (plains) is still mostly bulk wine. The difference is night and day.
Recioto di Soave (sweet, from dried grapes) is Soave's hidden gem—honeyed, complex, age-worthy. It rivals Sauternes at 1/3 the price.
Technical Deep Dive
Garganega has moderate acidity (5.5-6.5 g/L), almond and citrus aromatics, and a slightly bitter finish. Alcohol: 12-13.5% ABV.
Volcanic soils (Soave Classico) produce mineral, structured Garganega. Alluvial soils (plains) produce thin, simple wine.
Recioto di Soave: grapes are dried for 3-4 months (appassimento), concentrating sugars. The wine is sweet (80-120 g/L RS), honeyed, and ages 20+ years.
Industry Secrets
Soave Classico from top producers (Pieropan 'La Rocca,' Anselmi 'Capitel Foscarino') ages 10-15 years. $25-50 bottles rival $80-100 white Burgundy. But nobody cellars Soave because it's 'cheap Italian white.'
