The Story

Refošk (or Refosco) covers the hillsides of Istria, making rustic, earthy wines that taste of the Mediterranean. It's the everyday red of Slovenian and Croatian wine country—unpretentious and delicious.

Refošk/Refosco is a grape family with multiple varieties across Italy, Slovenia, and Croatia. The Istrian version is distinct—adapted to the peninsula's maritime climate and red soils.

Under Yugoslavia, Refošk was bulk wine—fermented fast, bottled cheap, consumed locally with seafood. Quality was inconsistent.

Slovenian and Croatian independence (1991) brought ambition. Producers started making serious Refošk—lower yields, oak aging, vineyard selection. The best examples now rival Southern Rhône reds.

But the everyday tradition persists. In Istrian konobas (taverns), Refošk is served from unlabeled bottles at room temperature, alongside grilled fish and olive oil. It's perfect for the context—not profound wine, but profoundly satisfying.

Technical Deep Dive

Refošk produces medium-bodied wines with moderate tannins (1,500-2,200 mg/L), fresh acidity (5.5-6.5 g/L), and dark fruit character (plum, sour cherry, blackberry).

The grape is vigorous and disease-resistant—easy to grow in Istria's humid climate. It handles the maritime influence well.

Flavor profile: sour cherry, plum, almond, earth, and mineral. Some detect an 'almond skin' note that's distinctive to the variety. The wine is rustic but charming.

Winemaking: stainless steel preserves freshness. Oak aging (old or new) adds complexity. Extended maceration (2-3 weeks) extracts color and structure.

Aging: drink Refošk within 5-8 years. It doesn't have the structure for long aging. Fresh examples are delightful; old examples are tired.

Industry Secrets

Istrian wine is about lifestyle, not prestige. Refošk is meant to be drunk casually with local food—prosciutto, truffles, grilled fish, olive oil.

Slovenian Refošk (Koper region) tends to be richer. Croatian Refošk (Istria) tends to be fresher. Both are excellent.

Pairing secret: Refošk's acidity matches Istria's famous truffles perfectly. White truffle season (autumn) is prime Refošk drinking time.

Top producers: Kabaj, Rojac, Clai, Kozlović, Arman. All make serious Refošk at $15-35.
