The Story

Sagrantino has the highest tannin levels of any grape—6,000-10,000 mg/L. That's 2-3x higher than Cabernet Sauvignon. Young Sagrantino is literally astringent. It needs 10-20 years to become drinkable.

Insider Story

Sagrantino was nearly extinct by 1970. Only a few hectares remained in Montefalco (Umbria). The grape was used for Passito (sweet wine), not dry wine.

In the 1970s-80s, producer Marco Caprai revolutionized Sagrantino. He made dry, age-worthy Sagrantino—dark, tannic, powerful. Critics loved it. 'This is Italy's most intense red!'

But Sagrantino is polarizing. The tannins are brutal. Young Sagrantino dries your mouth completely. Most consumers can't handle it. Patient collectors who wait 15-20 years are rewarded with magnificent wine.

Technical Deep Dive

Sagrantino has the highest tannin levels of any Vitis vinifera grape: 6,000-10,000 mg/L (vs. 2,500-4,000 for Cabernet). The tannins are aggressive and astringent.

Winemaking must manage tannins: extended maceration (30-40 days) to polymerize tannins, oak aging (24-36 months) to soften, bottle aging (2-3 years before release). Even then, it needs 10+ years.

Passito (sweet Sagrantino) is the traditional style. Grapes are dried for 2-3 months, concentrating sugars. The wine is sweet, tannic, and ages forever.

Industry Secrets

Montefalco Rosso (Sagrantino blended with Sangiovese) is the gateway drug. It's 15-25% Sagrantino—enough for structure, not brutal. $15-30 vs. $40-80 for pure Sagrantino.
