History

L'Étoile became one of France's first AOCs on July 31, 1937, recognized for exceptional white wine quality. The name "star" comes either from five surrounding hills or the abundant star-shaped crinoid fossils (pentacrines) in the soil - remnants of an ancient shallow tropical sea. Medieval tradition held these fossils warded off evil spells.
