History

18th-century documents describe sophisticated harvest protocol: capata first cut collected grape cluster "shoulders" only; second cut gathered remaining fully ripe grapes; third cut reserved for overripe, botrytis-affected grapes when morning mists appeared - these became Cannellino. Ancient winemaking tradition at Tusculum (now Frascati) since 5th century BC. Sweet wines prized by Romans, Medieval Popes, Grand Tour travelers. DOC system merged into Frascati DOC 1966. September 2011: EU elevated Cannellino di Frascati to separate DOCG status alongside Frascati Superiore, recognizing distinct sweet wine tradition.
