History

Ripasso technique traditional Valpolicella method for centuries. Valpolicella wine refermented on leftover Amarone/Recioto pomace (unpressed skins, still-fermenting lees) after Amarone racked to finishing tanks. 2007 DOC Ripasso denomination established after growing production success. Official DOC status granted 2010. Production tripled within few years post-DOC. Process: September-October Valpolicella harvest + first fermentation (10-15 days), wine stored steel tanks until winter. December-January Amarone vinification (dried grapes, month-long fermentation). February-March Amarone racked off skins, Valpolicella base added to pomace for second fermentation (3+ days minimum, 10-15% volume addition). Most Amarone producers now make ripasso as accessible "second wine". Sommeliers recommend as Amarone alternative for budget-conscious consumers. Growing market success.
