After the 1730s eruptions buried this island in ash, farmers invented the most insane viticulture technique on Earth: dig a funnel-shaped crater into the lava, plant one vine at the bottom, build a crescent wall to block the wind. Ten thousand craters. Ten thousand vines. A black moonscape stretching to the horizon. These vines survived phylloxera when Europe lost everything - the louse could not survive in the ash.

Insider tip. The vines here drink "moon water" - humidity that condenses on the porous volcanic ash at night. That is why they harvest at night by headlamp during vendimia nocturna. Contact bodegas in July to ask about August dates.
