In 1849, the French government voted to demolish Europe's largest medieval fortress and sell it for quarry stone. One man — local historian Jean-Pierre Cros-Mayrevieille — spent decades writing letters, cornering bureaucrats, and irritating every official in Paris until Prosper Mérimée finally came to look. The restoration took 58 years and saved all 52 towers. Below the ramparts, the same families who watched the walls go up still grow Minervois and Cabardès on the slopes of the Aude valley.
