    Louis XIV called it 'Vinum Regum, Rex Vinorum' — Wine of Kings, King of Wines. In 1737 a royal decree delimited the Tokaj wine region and set the basis of its origin protection — the statutory council still dates the region's legal delimitation to that year. The cellars are carved from volcanic tuff and blanketed in Cladosporium cellare — a black mold that exists only in Tokaj and the Rhineland. István Szepsy, 16th-generation winemaker, hid his best vineyard parcels from the Communists. His Aszú sells for €600+. Essencia — 5ml per kilogram of grapes, 3.5 years to ferment — is served from a crystal spoon because it refuses to leave a glass.
