Listen for the tension - a man trained at the world's most famous wine school, betting everything on a grape most of the wine world had never heard of in Koutsi village at 550 metres altitude.

   Notios means 'The Southerner' in Greek - 85% Agiorgitiko, 15% Syrah, deliberately unoaked, from 40-year-old vines at 450-550m altitude. This is the unadorned grape: no oak to hide behind, no tricks. During the full tasting (8 wines, approximately €15-20 per person, book at +30 27460 22057), focus on the tannin structure when you taste Notios. Agiorgitiko is called the 'St. Laurent of Greece' for its velvet texture. Then ask to compare with a Monograph or single-vineyard Agiorgitiko - the same grape, the same valley, transformed by winemaking intent. You are tasting the argument Gaia has been making since 1994: that Agiorgitiko has a range, not just a style.

   Decode Thalassitis - The Santorini Wine Poured in a Peloponnese Cellar

   Gaia operates in two locations - Nemea and Santorini. The Thalassitis is their Santorini flagship. Drinking it here is deliberate.

   Thalassitis means 'Originating from the Sea' in Greek - 100% Assyrtiko from vines approaching 80 years old, grown in three of PDO Santorini's premier terroirs. Yields are capped at 25 hectolitres per hectare - absurdly low, roughly one-third of what most European appellations allow. When this wine arrives during the tasting, smell before you taste. Look for the signature smoke and saline edge - that is volcanic Santorini soil in your glass. Then ask: 'Why does Gaia make a Santorini wine as well as a Nemea wine?' The answer reveals the dual-island logic of the founders - proving two completely different Greek terroirs could both achieve world-class quality.

   Before 1994, Nemea's wine industry was dominated by large cooperative wineries producing bulk wine for the domestic market - quantity, not identity. You are standing at 550 metres above sea level on a 15-percent slope in Koutsi village, where Gaia's founders chose THIS altitude, THIS slope, and THIS village because the terroir was already here. During the vineyard walk (before or after the cellar tour), look down the slope and ask your host: 'Were these vines here when Gaia bought the land?' If yes, you are looking at vines that predate the revolution by decades. They carried the genetic memory of Agiorgitiko through the era when nobody cared.

   🔄 BACKUP: If the vineyard walk is not included on your visit day, ask to see it from the winery terrace or any elevated window. The slope direction and altitude are visible from the building. The view alone earns the question.
