   That slice of Speck was documented in 1200 AD. It exists because South Tyrol sits where Mediterranean salt-curing met Northern European smoking. Both techniques fused into something unique: ham cured with rosemary, bay, and juniper for three weeks, then alternately smoked and air-dried for minimum 22 weeks. Only 29 producers worldwide are certified to make Speck Alto Adige PGI. Hold a slice to the light — see the pink interior and herby black crust that certification inspectors check. Taste first without wine, then with Schiava (light red documented in 11th-century records) whose low tannins cut smokiness without competing.

   This house was built in 1366 — 660 years ago. Andreas Mock farms Wassererhof now (Völser Ried 21, Fiè allo Sciliar), makes wine, and cooks in a working farm feeding people since late Middle Ages. Behind the farmhouse, the Schlern rises 2,564 meters. Reserve +39 338 777 9227, open mid-March to Christmas. Ask Andreas to pour the Schiava first, order full marende. During Törggelen season, order Suser (new wine), roasted chestnuts, Schlutzkrapfen, and sweet Krapfen. The word comes from 'Torggl' — the wooden wine press in the cellar below.
