They earned a Michelin star in 2021, Green Star in 2022 — only 7 tables. Look for their philosophy signage and ask your server: "What does 'regenerative' mean beyond organic?" The answer involves improving soil health while their cows graze Dolomite mountain pastures.

   BACKUP: If no signage, ask where tonight's butter came from. The answer will be: "Our farm." Follow up: "How far away?"

   Mid-meal during the cheese course, they'll invite you to descend into a 12°C limestone cellar CARVED INTO THE DOLOMITES. This is the SECRET — DON'T ask about it, DON'T mention you know. The surprise IS the experience. When they gesture to follow, say nothing and descend into 250-million-year-old rock. Feel the temperature drop. This unannounced cellar visit is what separates SanBrite from standard Michelin dining.

   BACKUP: If for some reason the cellar visit doesn't happen (maybe you're at a different table?), ask at the END: "I heard there's a cheese cellar?" They might offer a quick look.

   Decode the 2022 Green Star Math
