The Story
Savagnin makes Vin Jaune—France's most unusual wine. Aged under a layer of yeast (voile) for 6+ years, it develops nutty, curry-like flavors. It's the closest thing to Sherry in France.
Insider Story
Vin Jaune ('yellow wine') is made only in Jura. Savagnin ferments normally, then ages in barrel for 6 years and 3 months minimum. A layer of yeast (voile) grows on top, protecting from oxidation while allowing slow oxidation. It's similar to Sherry's flor.
The result is nutty, curry-like, intensely savory wine. It's an acquired taste. Some people love it obsessively. Others find it bizarre.
Vin Jaune is bottled in clavelin—a distinctive 620ml bottle (the volume left after 6 years of evaporation from 1 liter).
Château-Chalon is Vin Jaune's Grand Cru—the appellation makes only Vin Jaune, nothing else.
Technical Deep Dive
Savagnin has high acidity (6-7 g/L), nutty and curry-like aromatics (from acetaldehyde), and high alcohol (13-15% ABV).
Voile: a layer of yeast (similar to Sherry's flor) grows on the wine's surface. It metabolizes alcohol, producing acetaldehyde (nutty, curry aromas). The voile also protects from excessive oxidation.
Aging: minimum 6 years and 3 months in barrel. Some producers age 10+ years. The wines are nearly indestructible—they last 50-100 years.
