Naoussa, Greece's first PDO appellation (1972), crowns Mount Vermio's slopes with Xinomavro vines—the "sour-black" grape that produced wines so prized during Ottoman occupation that 19th-century producers smuggled them into European palaces to avoid Ottoman taxes.
