Cabernet Franc is Cabernet Sauvignon's parent (Cab Franc x Sauvignon Blanc = Cab Sauv). But it's not just a parent—it's Loire Valley's star. Chinon, Bourgueil, Saumur-Champigny—these are 100% Cab Franc and world-class.
Insider Story
For decades, Cabernet Franc was dismissed as 'Cabernet's lesser sibling.' Bordeaux used it for blending (10-30%). Nobody bottled it solo.
Then, sommeliers discovered Loire Cab Franc. Chinon and Bourgueil make 100% Cabernet Franc—lighter, more aromatic, more elegant than Bordeaux. The wines taste of raspberry, violet, graphite, fresh herbs. Critics loved it.
But here's the secret: Loire Cab Franc is climate-sensitive. In cold years, it's green and vegetal (pyrazines dominate). In warm years, it's lush and fruity. Vintage matters more than producer.
Technical Deep Dive
Cabernet Franc has medium tannins (2,000-2,500 mg/L), moderate acidity (5.5-6.5 g/L), and distinctive aromatics (raspberry, violet, graphite, green bell pepper). Alcohol: 12-14% ABV.
Pyrazines are key. These compounds create 'green' aromas (bell pepper, jalapeño). Cool climates (Loire) have more pyrazines. Warm climates (Napa, Bordeaux in hot years) have less.
Winemaking: Loire uses stainless steel or neutral oak (preserve aromatics). Bordeaux uses new oak (adds structure). Napa uses heavy oak (masks pyrazines).
Industry Secrets
Right Bank Bordeaux's secret: Cheval Blanc is 50%+ Cabernet Franc. It's one of the world's greatest wines, and Cab Franc is the star. But Cheval Blanc markets itself as 'Bordeaux,' not 'Cabernet Franc.' The grape gets no credit.
